Get your BlizzCon food buff with this lemon bars recipe
With BlizzCon on the horizon — and for some of us, the end of summer — why not take a break with a quick and easy snack that’ll have you coming back for more while you watch BlizzCon streams all weekend and collect those Twitch Drops? We have selected an excellent snack to accompany your BlizzCon viewing party, even if it’s just you.
These lemon bars are so good, you’ll understand why they go by a name we can’t say on this page. But here’s a hint: the initials are right there on Cassidy’s belt.

BAMF Lemon Bars
Equipment
- 13 × 9-inch baking pan
- 1 plastic sandwich bag
- Mixer and mixing bowl
Ingredients
- 1/2 cup (1 stick) salted butter, softened
- 3 eggs
- 1 (8 oz.) package cream cheese, softened
- 1 box lemon cake mix
- 3 1/2 cups confectioners’ sugar
How to make BAMF Lemon Bars
Preheat oven to 350°F.
First, grease your baking pan. I recommend using the butter wrapper after you’ve added the stick of butter to your mixing bowl. There should be enough butter left on the wrapper to grease the entire pan.
Mix one egg, 1/2 cup of butter, and the box of lemon cake mix in your mixer until it reaches the consistency of Play-Doh. Do not follow the directions on the cake mix box.
Once the mixture is thick enough to mold, dump it into the greased baking pan. Don’t bother cleaning the mixing bowl or beaters—you’ll need them again.
Slip the sandwich bag over your hand and use it to press the dough evenly across the bottom of the pan. It will be a thin layer, but there should be enough to completely cover the bottom.
Add the two remaining eggs, softened cream cheese, and 3 1/2 cups of confectioners’ sugar to the same mixing bowl. Any bits of lemon dough left behind will add a nice hint of lemon to the buttercream.
Keep in mind that powdered sugar is the glitter of the baking world, and it will get absolutely everywhere if you just turn on the mixer. I recommend draping a towel over the top of the mixer and letting it run for about 30 seconds. Remove the towel once the sugar is blended enough that it won’t spray everywhere, then continue mixing for another minute until the mixture is smooth and gooey.
Spread the buttercream mixture evenly over the lemon dough, using the back of a spoon to smooth it out.
Bake for 40 minutes. And yes, you are baking these with the frosting already on top. When they come out of the oven, they should have a beautiful golden crust.

Now comes the really hard part: you need to let the lemon bars sit for about an hour before cutting into them. They’ll be sitting there on the counter, calling to you. Tempting you.
I recommend moving away from the kitchen and logging into World of Warcraft to take advantage of the Winds of Mysterious Fortune buff and earn some extra Trading Post tendies to distract yourself.
After an hour, they’re ready to cut and enjoy. Just try not to eat the entire pan in one sitting.
